廚師發辦源自日本，由主廚挑選最優質、最時令的食材，為客人對菜式作出主導​。現PAPA亦一同推廣香港飲食文化交流，為客人推出嶄新的西式廚師發辦，並以多國菜為主題，務求能帶給客人不同的飲食驚喜。​

Omakase originated from Japan, and the chef selects the highest quality and most seasonal ingredients to lead the dishes for the guests.​ At present, PAPA is also promoting the exchange of food culture in Hong Kong together, launching a new Western-style chef for guests, and the theme of multi-national cuisine, in order to bring guests different food surprises.
